鸡丝茼蒿杆

原料
茼蒿---------300克
鸡胸肉-------200克
红辣椒-------20克
鸡蛋清--------1个
调料
蒜末---------15克
精盐---------1小匙
味精-------1/2小匙
淀粉---------2小匙
水淀粉-------1大匙
植物油-------适量
制作步骤
1 茼蒿去根及叶,洗净沥干,切成3厘米长的段;红辣椒洗净,去蒂及籽,切成细丝。
2 鸡胸肉去筋膜、洗净,切成细丝,再放入小碗中,加入少许精盐、淀粉、植物油和鸡蛋清拌匀,腌渍10分钟,放入热油锅中滑散、滑透,捞出沥油。
3 锅中留底油烧至六成热,先下入红辣椒丝、蒜末炒出香味,再放入茼蒿杆翻炒均匀。
4 然后加入鸡肉丝略炒,放入精盐、味精炒至入味,再用水淀粉勾芡,淋入明油,即可出锅装盘。
