冰糖5克

食用油适量
将鸡爪剪去趾甲,剁2段备用。锅中倒入足量冷水,放入鸡爪,整个焯水过程不要盖锅盖。调入料酒,大火煮开至浮沫溢出图1,捞出洗净,用厨房纸巾擦干备用;小葱洗净,切段;姜洗净,切片。

锅洗净倒入适量食用油,下入葱段、姜片、八角、花椒爆香图2。再倒入鸡爪,翻炒几下。调入老抽上色,倒入没过鸡爪的清水,调入生抽、盐、冰糖,大火烧开图3。虽然冰糖可以用白糖代替,但还是会有区别,除了口感较清甜外,冰糖会使鸡爪色泽更亮丽诱人。

转小火炖煮约1小时,直至能用筷子轻易戳透鸡爪图4,适当收汁后出锅,但要注意不要把汤汁收得太干。适当缩短炖煮时间,会使鸡爪紧实有嚼劲,不过色泽会偏淡一点。
