挂糊
挂糊,就是将经过初加工的烹饪食材,在烹制前用水淀粉或蛋泡糊及面粉等辅助材料挂上一层薄糊,使制成后的菜肴达到酥脆可口的一种技术性措施。
在此要说明的是挂糊和上浆是有区别的,在烹调的具体过程中,浆是浆,糊是糊,上浆和挂糊是一个操作范畴的两个概念。挂糊的种类较多,一般有如下几种。
蛋黄糊的调制
蛋黄放入小碗中搅拌均匀。

再加入适量的淀粉调匀。

然后放入少许植物油。

全蛋糊的调制
鸡蛋磕入碗中,打散成蛋液。

发粉糊的调制
发酵粉用清水调匀。

面粉、发酵粉水放入碗中搅匀。

鸡蛋清放入大碗中。

用打蛋器顺着一个方向连续抽打。
